Sweet potatoes are a representative specialty of Kagoshima Prefecture, boasting the highest production volume in Japan. “Satsuma Shochu” is a type of shochu that can only be named as such if it is made using sweet potatoes, water, and koji from Kagoshima Prefecture, with the entire process, from fermentation to bottling, being done within the prefecture. In 2005, it was certified as a “Geographical Indication” by the WTO (World Trade Organization).
